One potato, two potato, three potato four … Happy National Potato Chip Day!

Potatoes come in all sizes and shapes, all with varying nutritional content. Some of our favorites? Regular, sweet potatoes and purple potatoes! Sweet potatoes are high in beta-carotene, an antioxidant that promotes eye health. Purple potatoes are VERY high in antioxidants, to help to protect your body and preserve it so that you have long lasting energy! Plus, they’ve got carbohydrates and fiber to help their energy boost last longer.

A 3.5 ounce potato is about 100 calories. On the other hand , less than one ounce of potato chips has about 140 calories. So we’re always trying to lighten them up to keep potato chips low in calories.

Here’s a lightened up version that gives you more bang for your calorie with our healthy home-made version! And while you’re at it, why not try to making them using a variety of potatoes!

Homemade Baked Potato Chips

Serves: 8

Ingredients:

  • 2 pounds of a variety of potatoes, washed (choose from sweet, purple, yellow, russet, anything you want!)
  • Extra virgin olive oil in a spray jar
  • 1 garlic clove, minced
  • Paprika to taste
  • Chili powder to taste
  • Pepper to taste

Directions:

Preheat oven to 350°F and slice potatoes VERY THIN! Spray olive oil on 4 baking sheets and rub garlic over sheets; heat in oven for about 5 minutes. Remove from oven, and place cut potatoes on sheet. Spritz potatoes with olive oil and sprinkle lightly with, pepper, paprika, and chili powder. Bake in oven for 8-10 minutes. Remove sheets, flip potatoes, and back for about 5-7 minutes or until golden brown. Voila! Potatolicious Chips!

Nutrition Information per serving:  90 Calories, 0.5g fat, 0g saturated fat, 21g carbohydrate, 2g protein,  1g fiber, 6mg sodium
