Simple Strawberry Parfait

Today is National Strawberry Parfait Day! Sounds like a holiday too dreamy to be true—but we didn’t make it up, it really is a full day dedicated to this yummy treat! And with summer officially here, what better way to cool things off?!

As you probably know by now, we love strawberries and we use them in a lot of our recipes (have you seen our Strawberry Raspberry-Lime Sherbet or our  Strawberry Banana Breakfast Cookies, or our Vanilla Pine-ana Strawberry Smoothie?)! They’re sweet and delicious and remind us of some of our favorite summer days as kids.  Our Mom was always trying to save money so she’d only buy strawberries when they were on sale, and it was such a treat for us! When we had them, we’d ride our bikes to the pool and bring the strawberries to snack on when it was “adult swim”, which meant kids had to clear the pool. We never liked leaving the pool, but the strawberries made it worth it! 🙂

Strawberries are a great source of vitamin C which boosts your immunity, helps your skin too look youthful as it aids in collagen production and helps to prevent damage to the body from environmental factors like pollution. Strawberries are also packed with an array of nutrients that can help fight bad cholesterol, regulate blood pressure and help to decrease inflammation, as well as being packed with fiber! Woo hoo! So if you’re not already enjoying strawberries, there are a lot of reasons to start!

To get you started here’s a delish Strawberry Parfait Recipe—a fantastic healthy dessert for less than 100 calories!

Easy Strawberry Parfait

Servings: 4

Ingredients

  • 1 lb. fresh strawberries
  • 2 cups nonfat vanilla frozen yogurt
  • 6 tbsp plain oats

Directions

  • Wash strawberries and slice them into quarters..
  • Add ¼ of the strawberries to four separate glasses.
  • Amongst the four glasses, divide 1 cup of yogurt and 3 tbsp oats, and pour over the strawberries.
  • Repeat with remaining berries and additional 1 cup yogurt and 3 tbsp oats. Use the remaining sliced berries to top each glass off.
