Hickory Apple Salad with Turkey Bacon

Apple season is in full swing now that October is here! So now is the season that apples are extra sweet and super delicious.  We love picking our own at  the apple orchard! If you aren’t a fan of apples, then you should be. Here’s the jam packed benefits of apples…hello pretty smile, hello lean, energized body!


Apples help to fight cavities– chewing an apple can build up saliva production which helps to lower the level of bacteria in your mouth! Apples also help to keep your immunity up—they contain 14% of your daily value of vitamin C! They can help boost your energy to keep your metabolism going throughout the day with their antioxidant-rich, energy-revving carbs. Plus, thanks to their abundant fiber, they stabilize energy levels and help you to feel full longer without consuming extra calories.

To keep apples going in your diet, here’s a simple apple recipe we just love – Hickory Apple Salad with Turkey Bacon!

Hickory Apple Salad with Turkey Bacon

Serves: 4

INGREDIENTS:

6 cups spring mix salad greens

2 teaspoons finely chopped fresh thyme or 1 teaspoon dried thyme

2 apples (such as Granny Smith or Gala), cut into julienne pieces

1/2 avocado, pitted, peeled and sliced

½ cup corn, fresh or canned, no salt added

4 eggs, hard boiled chopped (we use Eggland’s Best eggs because they have 25% less saturated fat than ordinary eggs)

Olive oil in spray jar

6 tablespoons fresh lemon juice (divided in half)

4 slices (4 ounces) low sodium turkey bacon, cooked, crumbled

 

DIRECTIONS:

In large bowl, toss the salad greens and thyme and spritz with olive oil; add 1 tablespoon water and half of the lemon juice (3 tablespoons) and mix. Top with apples, avocado, egg and turkey bacon. Spritz with oil, mix with another tablespoon water and the remaining 3 tablespoons of lemon. Divide the salad evenly among four salad plates and enjoy!
