Blueberry Quinoa in Champagne Vinaigrette

This dish is super-satisfying, packed with flavor and easy to make! Plus, it’s vegetarian (plant-based, woohoo!)! Hello, Meatless Monday—or Tasty Tuesday—or Scrumptious Sunday… 🙂 It has a citrusy twist and it goes great with several different grains you may have in the house—try quinoa or millet for the whole grain and fiber boost to really keep you feeling full and satisfied—yet light as a feather (it won’t weigh you down!)!

Blueberry Milletauto

Blueberry Quinoa in Champagne Vinaigrette

 

Serves 2

 

Ingredients:
1 cup cooked millet or quinoa
1 cup blueberries
1 medium orange, sliced about 1/8 inch thick
1 tbsp Cilantro or basil, chopped

 

Dressing:
6 ounces nonfat Greek yogurt (the standard individual sized cups)
1 tsp ginger, fresh grated
¼ cup orange juice (or 1 tbsp sugar or 2 teaspoons stevia)
2 teaspoons lemon juice
1-1/2 Tbsp champagne vinegar (or red wine vinegar or other flavored vinegar)
1/8 teaspoon sea salt (or salt to taste)

 

*Note, if using millet, may want to use more orange juice or sweetness in the dressing as millet has a bit of a bitter taste.

 

Directions:
1. In a medium bowl mix quinoa (or millet) with blueberries and oranges.
2. In a small mixing bowl, whisk ginger, orange juice (or sugar or stevia), lemon juice, vinegar, cilantro and salt.
3. Pour dressing over quinoa mixture, stir together and enjoy! Yum!
