Chocolate Drizzle Popcorn

Who doesn’t love eating popcorn?!  We gotta admit, even as registered dietitians we find it’s super fun to pop in your mouth and the hardest thing is to remember to go slowly—it’s easy to get carried away and gobble it, especially because it makes for such a great energy boosting snack!

 

When our clients try this, they always seem to request other low calorie treats– and so we always are creating recipes to share, like our  dessert balls– our Chocolate Drizzled Granola Balls, our White Chocolate Drizzled Wild Blueberry Granola Balls and our Chocolate Coconut Chia Balls.

And there are some mega-popcorn bonuses!  Did you know that a cup of air-popped corn is only 30 calories, full of fiber to help you to feel full longer and is whole-grain to boot?!  Whole grains like popcorn help reduce the risk of developing many major diseases including heart disease, cholesterol, diabetes, obesity and certain cancers.

Another added bonus? The fiber in popcorn grabs onto toxins as it makes its way through the digestive system.  And you can get all these benefits and a Chocolate Drizzle too!  We know, it sounds too good to be true, but it’s all of our amazing reality!  Dig in and enjoy!

 

Chocolate Drizzle Popcorn

Serves 4

 

Ingredients

¼ cup popcorn kernels

16 Bittersweet Chocolate Baking Chips, 60% Cacao

 

Directions

Using a hot air popper, freshly pop the kernels. In the meantime, line a baking sheet with wax paper. Once the popcorn is fully popped, gently spread it out on the baking sheet and let cool for 5 minutes. Place the chocolate chips in a microwave safe bowl covered by a paper towel and melt for 45 seconds to 1 minute and 30 seconds – the time depends upon each microwave oven. The key is for the chips to completely melt and have a smooth consistency. Stir if necessary. Drizzle the hot chocolate over the popcorn kernels. Allow your delicious dessert to cool for 10-15 minutes. Enjoy!

The photo above was taken the first time we made this when we used a lot more chocolate.  We realized that we could still get the delicious flavor we wanted but were able to significantly cut the calories with the recipe above!
