Coco Chia Granola Balls

Ok, we admit it! We’re registered dietitians and personal trainers who often lead with our chocolate tooth! BUT, it’s with ours, our clients and your waistlines in mind!  So if you happened to have stumbled upon our chocolate tooth version of this recipe, The Chocolate Drizzled Granola Balls and already love that 59 calorie treat, don’t snub this recipe quite yet!  Really!

This recipe is so easy, yet so delish!  Each serving is 50 calories and it’s super  satisfying.  This is an awesome way to get some chia if you are trying to incorporate some in your life!  Plus, for those who are time crunched –this is one less step than the chocolate drizzled version (kind of like our Wild Blueberry Granola Balls and our Chocolate Coconut Chia Balls) and super delish in it’s own right!

Coco Chia Granola Balls
Serves 8

Ingredients
1/2 Cup quick oats
2 Tbs almond butter
2 Tbs honey
1 tbsp chia seeds
1 Tbs coconut oil, melted
1 Tbs cacao powder
7 chocolate chips, melted, for drizzling on top (optional)

Directions

Place all ingredients in a bowl and stir until mixture is smooth and thoroughly combined. The mixture may be crumbly at first, but once you roll it into balls it will stick together.

Using your hands press the mixture into a tablespoon. After you have measured the right amount, firmly form the mixture into a ball and then start to roll it in between your hands. Once it is formed into a perfectly smooth ball, place it on a plate. Melt chocolate and drizzle on top

Nutrition Facts Per Serving (1 delicious ball with chocolate drizzled on top): 59 Calories, 8 g Carbohydrate, 3 g fat, 1 g protein, 2 fiber, 2 g saturated fat

Without chocolate on top, each ball is 50 Calories.
