CREAMY OATS & FRUIT PUDDING

When we found this recipe, our mouths started watering and it brought us back to our teen years when our Mom used to make a similar rich, creamy and delicious oatmeal dish several times a week.  It was one of our favorite breakfasts before a school day or before a weekend soccer game since not only was it delicious, but it helped give us energy to play. We love this version that uses DANNON® OIKOS® Greek nonfat yogurt, which adds extra protein—and we bet you will too!

CREAMY OATS & FRUIT PUDDING

This creamy, rich oat pudding will keep you warm on a cool day, and comforted when the weather heats up.

 

· PREP TIME 3 minutes

· COOK TIME 6 minutes

· YIELDS 1 serving

 

Ingredients

1/2 CUP QUICK OR OLD FASHIONED OATS

1/2 CUP +1 TBSP. OIKOS® GREEK 0% PLAIN OR VANILLA, DIVIDED

2/3 CUP WATER

PINCH OF SALT

HONEY, AGAVE NECTAR OR BROWN SUGAR TO TASTE

FRESH OR DRIED FRUIT (BERRIES, CHOPPED APRICOTS, RAISINS, DRIED CRANBERRIES OR BLUEBERRIES) TO TASTE

CHOPPED TOASTED NUTS (WALNUTS, PECANS OR ALMONDS) TO TASTE

 

Directions

  1. MIX OATS, 1/2 CUP YOGURT, WATER AND SALT TOGETHER IN A SMALL SAUCEPAN, OVER MEDIUM HEAT, SIMMER MIXTURE, STIRRING OCCASIONALLY FOR 4-6 MINUTES OR UNTIL THICKENED TO DESIRED CONSISTENCY.
  2. TRANSFER OATMEAL TO A BOWL, AND TOP WITH FRUITS AND NUTS AS DESIRED AND A DOLLOP OF REMAINING YOGURT.

 

Nutrition Information (analyzed using ¼ cup blueberries and 1 tsp slivered almonds and ½ teaspoon sugar as sweetener): 260 calories, 39 grams carbohydrate, 4 grams fat, 1 gram saturated fat, 17 grams protein, 5 grams fiber
