Crispy Homemade Fries

If you’re not already drooling over the idea of delicious Baked Coconut Crusted Tilapia topped with the amazing Spring Pineapple Chutney, add these Crispy Fries to the mix and you’ll have a fab meal!  Fish and chips are a favorite American splurge.  Make it healthy so it doesn’t have to be a once in a while treat!

FINALLY! Fries that keep you skinny and so delish that you won’t crave the heavy stuff! Enjoy these- YUM! 🙂

Crispy Fries:

Ingredients

  • 1-2 teaspoons olive oil
  • 2 medium baking potatoes, scrubbed and cut into thick wedges
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons chopped parsley
  • 3 tablespoons reduced fat Parmesan
  • Olive oil cooking spray

Directions
Preheat the oven to 450 degrees Fahrenheit.

Line a baking sheet with parchment paper and lightly spray the paper with olive oil.
In a medium bowl, toss the potato wedges, oil, cheese, parsley, salt, and pepper until the wedges are well coated.

Line baking sheet with wedges.

Bake for 10-12 minutes, or until potato wedges are soft in the middle and crispy on the outside.

Sprinkle Parmesan over wedges and enjoy!
