Easy Turmeric Avocado Egg Salad

By now you probably know that we’re girls who have countless love affairs with far too many foods to count (some may say some of our favorite foods are a bit, well, strange, but we prefer to call them “unique.” ☺ Red cabbage, anyone?). And although we’re identical twin sisters, Lyssie fell first– hard and fast for turmeric, and she started experimenting with it immediately. Don’t get us wrong, Tammy wasn’t dragging her feet so far behind drooling over our love, but Lyssie was the first to try turmeric and whip up an egg salad with it using a creamy avocado. After all, who doesn’t want a delicious, go-to, healthy lunch, snack, barbecue food or weeknight dinner that hits the spot and fights inflammation? These twins do!

Easy Turmeric Avocado Egg Salad

Makes 3 servings (1/2 cup each)

Ingredients:

  • 8 hardboiled eggs (4 with the yolks removed)
  • 1 medium avocado
  • 5 tablespoons Greek low-fat yogurt
  • 2 teaspoons lemon juice
  • 2 tablespoons cilantro, chopped
  • 3 (85g) radishes, chopped
  • ½ teaspoon turmeric

Directions:

  1. Chop up the egg whites and yolk for the salad.
  2. Mash avocado in a bowl. Add the cilantro, turmeric, radishes, lemon juice, and egg whites. Thoroughly mix and serve on whole grain bread or a bed of lettuce.
