Corn & Edamame Salad

Ingredients
  • 1 bag (3-3/10 cup) Organic Super Sweet Frozen Corn (We used Trader Joe's)
  • 1 bag (2- 3/10 cup) frozen shelled edamame (We used Trader Joe's)
Instructions
  1. Simply let the veggies thaw in the fridge when you get back from the store or allow them to thaw overnight.
  2. When veggies are mostly or completely thawed (ok for them still to be very cold and even slightly frozen) mix the corn and edamame together in a medium size bowl. If your meal was very cold, this can be your final step--you can eat this cool, refreshing, sweet and crunchy salad.
  3. If your mix was completely thawed you may want to dump the mixture into a strainer to drain the extra liquid from the corn.  We don't drain the corn before mixing with the edamame as the sweet flavor of the liquid acts as a dressing for the edamame salad.  You may even choose not to drain the liquid at all--and if so, we don't blame you, it's gonna happen in our houses too! :)
