Blueberry Quinoa in Champagne Vinaigrette
Ingredients
  • 1 cup cooked millet or quinoa
  • 1 cup blueberries
  • 1 medium orange, sliced about ⅛ inch thick
  • 1 tbsp Cilantro or basil, chopped
  • Dressing:
  • 6 ounces nonfat Greek yogurt (the standard individual sized cups)
  • 1 tsp ginger, fresh grated
  • ΒΌ cup orange juice (or 1 tbsp sugar or 2 teaspoons stevia)
  • 2 teaspoons lemon juice
  • 1-1/2 Tbsp champagne vinegar (or red wine vinegar or other flavored vinegar)
  • ⅛ teaspoon sea salt (or salt to taste)
  • *Note, if using millet, may want to use more orange juice or sweetness in the dressing as millet has a bit of a bitter taste.
Instructions
  1. In a medium bowl mix quinoa (or millet) with blueberries and oranges.
  2. In a small mixing bowl, whisk ginger, orange juice (or sugar or stevia), lemon juice, vinegar, cilantro and salt.
  3. Pour dressing over quinoa mixture, stir together and enjoy! Yum!
