Slow Cooker Quinoa Chicken Chili

Serves: 6 servings
- 1 cup quinoa, uncooked
- 1, 28 oz can crushed tomatoes
- 1 14 oz can diced tomatoes
- 1 can, 15 oz black beans*
- 1 can 15 oz kidney beans*
- 2 chicken breasts
- 3 cups vegetable stock*
- 1 large bell pepper, chopped
- 1 tsp cumin
- 1 tsp chili powder
- Place all ingredients in a 6 quart slow cooker, and cook on low for 5-7 hours.
- Remove chicken from the slow cooker, shred it, using two forks to pull chicken apart, and return it to the slow cooker.
- Keep warm in slow cooker until you are ready to serve it.
- Top with a dollop of Greek yogurt or low fat cheese, and enjoy!
