Strawberry Banana Breakfast Cookies

Serves: 4 cookies
- 1 very ripe banana
- ½ cup quinoa flakes
- Cinnamon, for topping cookies (amount based on preference)
- A few strawberries, for topping
- Preheat oven to 375 degrees.
- In a bowl, mash banana until very few lumps are left.
- Add quinoa flakes and mix so that the quinoa flakes and banana form a workable “dough”.
- Grease a baking sheet, then form four cookies from the “dough”.
- Top each cookie with a sprinkle of cinnamon.
- Slice a strawberry or two, and place a slice on each cookie.
- Bake the cookies for 12-15 minutes, until just golden.
- Let cookies cool briefly, and enjoy!
