Skinny Mini Muffins

Ingredients
  • ¼ cup unsweetened applesauce
  • 1 cup gluten free biscuit mix (the texture is not as impeccable if you substitute with a gluten free flour)
  • ¼ cup stevia (or your favorite sweetener)
  • 2 tbsp. trans-free all natural soft-spread, at room temperature
  • ¼ tsp. sea salt
  • 2 tbsp. milled flax seeds
  • ¼ cup water
  • ½ cup rice milk
  • ¼ tsp. vanilla
  • 2 tsp. baking powder
Instructions
  1. Preheat the oven to 350 degrees.
  2. Mix applesauce, sweetner, and soft spread together. Mix in biscuit mix, then remaining ingredients.
  3. Pour into 24 mini muffin tins and bake for approximately 30 minutes, or until brown.
