Add oil to frying pan on medium heat and add frozen cauliflower rice. Heat, while stirring occasionally, for about 5-8 minutes. After warmed throughout, add flaxseeds, cilantro, and juice from the lime to the cauliflower.
Mix well.
Half the two avocados, scoop out a spoonful of the inside to allow for more stuffing. Stuff the avocados with blended mixture.
Top with ¼ cup tomato on each boat.
Sprinkle breadcrumbs on top of the tomato and voila! A simple, beautiful side dish, appetizer, or anytime fun food!
