Salmon with Pineapple Salsa
1 4-oz salmon filet
½ tsp ground cumin
¼ cup diced pineapple
2 tbspchopped red onion
1 tbspchopped cilantro
On the side: ½ cup cooked brown rice
and 1+ cups seamed broccoli
1.Preheat the oven to 375°F.
2.Place the salmon filet on a foil lined baking sheet and sprinkle with the ground cumin, then squeeze half of the lime over the top.
3.Bake the salmon for about 10 minutes, until cooked through.
4.Meanwhile, stir together the juice from the other half of the lime with the pineapple, red onion, and cilantro.
5.Serve the salmon with the salsa on top, alongside brown rice and steamed vegetables.
