Tangy Asparagus and Tomato Salad

Growing up our mom’s favorite veggie was asparagus. But it was tough to get if it wasn’t in season so it was always a luxury when we’d have it. Nowadays, we’re spoiled, our market has it year round. Whenever we are cooking for our mom, we always want to make her favorite veggie—and with her coming for dinner, we were excited to whip this up for her! Say hello to this scrumptious and easy to make Tangy Asparagus and Tomato Salad!

Asparagus Salad

Asparagus is a great source of folate. You’ve likely heard of folate and folic acid. Folate is a type of B vitamin that is found naturally in foods like dark green leafy veggies, fruit and fruit juices, grains and nuts, beans and peas. The form known as folic acid is used in dietary supplements. Both forms help your body to produce and maintain new cells (hello glowing skin ;)), and also helps prevent changes to DNA that may lead to cancer. So take a bite into this scrumptious salad while doing your body a healthy favor!

 

Tangy Asparagus and Tomato Salad

Serves: 5

 

Ingredients

1/2 cup rice wine vinegar

3/4 tbsp sugar

Sea salt to taste

1 tbsp olive oil

1 teaspoon lemon juice

1/2 lb. asparagus – cut into 1-inch pieces, cooked and drained

1/2 cup crumbled fat free feta cheese

10 cherry tomatoes tomato, diced

2 tbsp chopped cilantro (optional)

 

Directions

  1. Mix together the vinegar, sugar, salt, lemon juice and olive oil in a medium sized bowl.
  2. Place the asparagus, feta cheese, tomato, and cilantro in the bowl with the dressing; and stir to mix the dressing in.
  3. Cover the bowl and refrigerate. Chill for 1 hour before serving. Enjoy as a salad with lunch or side dish at dinner!
