We originally made these awesome tots for Valentine’s Day–and in honor of the holiday that’s known for one of our favorite indulgences (chocolate, of course! :)), we wanted you to indulge in some yummy goodness– guilt-free! 

By now you know that although we are registered dietitians and personal trainers who base our diets on fresh, unprocessed healthy foods, we are suckers for chocolate. 🙂 Yep, in fact, we’re so wild for chocolate, that it wouldn’t surprise us if you told us that you heard us arguing over the last chocolate covered pretzel…or a Hershey’s kiss…or a hot chocolate (we don’t discriminate and would even enjoy one in the summer) for that matter! 🙂 So we’re always whipping up new yummy, waistline-friendly– and healthy– chocolate recipes! Have you tried our Guac-Chocolate Mousse or our Chocolate Drizzled Granola Balls or our Chocolate Coconut Chia Balls, just to name a few.

(By the way, we whipped up these little yummies as we were listening to some of our favorite Love Songs in the spirit of the holiday. For Lyssie, it’s either Whitney Houston’s “I Will Always Love You” or Roberta Flack’s, “Killing me Softly”—or one of Sade’s– many!  For Tammy, “I Just Called to Say I Love You” by Stevie Wonder and “I Want to Know What Love Is” by Foreigner—and ever since, every time we make these, we listen to music :)).

You don’t need the music to fall in love with these scrumptious treats, but it sure makes it fun! Try this simple and delish dessert below!

 

Chocolate Fruit Cups


Serves: 10


Ingredients

  • 1 cup chocolate chips (preferably dark chocolate one)
  • 10 paper cupcake liners
  • 2 cups fresh strawberries or any of your favorite fruit; sliced in half
  • Oil in a spray container (or cooking spray)


Directions

1.      Melt chocolate in a microwave safe container (timing varies by microwave, start with 45 second intervals and depending on your microwave, see if you need more.

2.      Lightly spray cupcake liners with oil  before spooning melted chocolate inside. Carefully brush the chocolate mixture inside the liner with a spoon, creating a thin layer about 1/4 inch or less.Make sure the chocolate fully covers the side of the cupcake liners.

3.      Place on a plate in the refrigerator or freezer for 30 minutes and allow the chocolate to harden.  Once hardened, check the cupcake liners to make sure there are no thin spots. If so, brush on more chocolate.


4.      When the chocolate has hardened, peel the paper liners.  You should have perfect chocolate cups. Fill each with sliced strawberries or your favorite fruit, drizzle with melted chocolate and enjoy!!
