Chicories

We love to head to our local farmers market on the weekend and pick up a few seasonal vegetables. Locally grown, seasonal foods always seem to taste better to us! Now that fall is here, we love to pick up chicories! Chicories are related to lettuce, but have sturdier leaves and a more bitter taste. A few examples of chicories are endives, radicchios, and escarole. Chicories have so many nutritional benefits – they are high in fiber, Vitamins A, C, E, K, and B6, folate, calcium, iron, potassium, and zinc and low in saturated fat and cholesterol to name just a few! We love to throw chicories into a tasty winter salad! Endives are our favorite, and we live to add roasted beets, apples, hazelnuts, and reduced fat feta cheese! It’s sweet thanks to the apples and beets, but the bitterness of the endives adds a nice balance to the salad.
