Carrot Ginger Dressing for Everything

Looking for a delicious and healthy way to add flavor to veggies, tofu or rice dishes? This dressing is vitamin-rich and delicious and adds a lot of low-calorie flavor. Ginger is warming and has anti-inflammatory properties and carrots are packed with disease-fighting beta carotene!

Carrot Ginger Dressing for Everything

Ingredients:

  • 3 medium carrots, coarsely chopped
  • ¼ cup peeled and chopped fresh ginger
  • 2 T chopped onion
  • ¼ C rice vinegar
  • 1 t soy sauce
  • 1 T sesame oil
  • 1/8 t salt
  • ½ C water

Instructions:
Pulse carrots in food processor until mostly smooth. Add all remaining ingredients except for water and pulse a few more times. Add about half the water and run the food processor again. Slowly add the remaining water until smooth.

Makes 4 servings.
