Pumpkin-Oat Bran Muffins

Halloween is over (gotta admit we’re both sad and happy about that one—such a fun holiday, but oy, so dangerous with all the candy!) and Thanksgiving will be here before we know it, but this small break between the two holidays doesn’t mean the treats and delicious holiday food has to take a break along with it. Yes! We’re the first to admit we certainly love our treats and are always looking for healthy holiday recipes to make for our friends and families to enjoy this time of year even more—without guilt! This Pumpkin-Oat Bran Muffins recipe is the perfect festive fall treat that will keep you energized and won’t spoil your mood with an excess amount of calories.

Ingredients:

  • 1 1/2 cups unprocessed oat bran
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup mashed pumpkin, cooked
  • 1/2 cup skim milk
  • 2 egg whites, lightly beaten
  • 2 tablespoons vegetable oil
  • vegetable oil cooking spray

Directions:

  1. Combine unprocessed oat bran, brown sugar, flour, baking powder, pumpkin pie spice, and salt in a large bowl. Stir well.
  2. Make a well in center of mixture.
  3. Combine pumpkin, skim milk, egg whites, and vegetable oil; stir well.
  4. Add to dry ingredients, stirring just until moistened.
  5. Spoon into muffin pans coated with cooking spray, filling ¾ full.
  6. Bake at 425 degrees for 20 minutes.
  7. Remove from pans immediately; serve warm or at room temperature.
