- 6 Roma tomatoes, diced
- 2 cloves garlic, minced
- 1/2 cup red onion, diced
- 2 Jalapenos, seeded, skinned (or more for extra spice)
- 1/3 cup cilantro, chopped
- Juice from one lime
- 1 tablespoon Extra Virgin Olive Oil
- 1/2 teaspoon cumin
- 1/2 teaspoon black pepper
- Salt to taste
