Want to add a little sunshine into this cold February day? Why not enjoy a clementine! Clementine’s are currently in season and they are packed with Vitamin C and potassium. Vitamin C helps keep inflammation at bay to help you to stay healthy and keep your energy level up. Potassium helps your body to relax so that you don’t waste your energy fighting off stress and you can preserve your energy for every day activities.

Looking for ways to incorporate clementines in your diet besides eating the fruit itself? We love to make our famous Clementine Vinaigrette to pour over salads or even use a marinade for chicken!

Clementine Vinaigrette

Ingredients:

  • 3 clementines
  • 1/4 cup of honey
  • 2 tablespoons of white wine vinegar
  • 2 tablespoons of lemon juice
  • 2 tablespoons of extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1/8 teaspoon pepper

Juice two clementines. Save the third Clementine for the zest. Add the vinegar, lemon juice, mustard and pepper to the Clementine juice. Then slowly stir in the honey and oil until thoroughly mixed. Zest the third Clementine and add to the mixture. Serve over your favorite green salad, delish!

This dressing is so light, sweet, and flavorful that a little bit goes a long way.
