Simple Yogurt and Oatmeal Pancakes

Yesterday we told you how much we love brunch. So in case you’re cooking brunch at home today and craving something on the sweeter side, here’s another recipe for you – Yogurt and Oatmeal Pancakes! These pancakes are a delicious treat and super simple to make!

Simple Yogurt and Oatmeal Pancakes

Ingredients:

  • 1 cup rolled oats
  • 1 ripe banana
  • 1/2 cup low fat or fat free plain greek yogurt
  • 1 egg
  • 1 1/2 teaspoons cinnamon

Directions:

  1. In a medium bowl, mash the banana until it’s a smooth consistency. Stir in the yogurt, oatmeal, cinnamon and egg.
  2. Heat a small pan over medium heat. Spray with light cooking spray.
  3. Ladle a small amount of the mix into the pan. Cook until the bottom starts to set. Flip and cook until the other side sets. Once set, remove from heat. Continue cooking ladlefuls until the batter is gone!

We love to top these with banana slices, berries, and a little bit of maple syrup! If you’re looking for something a little bit sweeter, substitute vanilla or a fruit flavored yogurt.

This recipe makes about six to eight, 4-5 inch pancakes, depending on how tightly packed the oats are and what size the banana is.
