Quinoa Greek Salad

We’re always trying to find ways to make our favorite recipes more interesting; they’re favorites for a reason – we love them! But favorites can still get boring if eaten over and over. One of our new discoveries is Quinoa Greek Salad. It’s so simple to make and the quinoa adds healthy protein and fiber as well as vitamins and minerals!

We cut the amount of lettuce we normally use in half and chop it very finely. Then we add the quinoa on top of the lettuce and top the quinoa with cherry tomatoes, cucumber slices, diced red onions, pitted black olives, reduced fat feta cheese (or fat free feta (we’ve found this at Trader Joe’s), and pepper and a dash of salt. If you add the toppings while the quinoa is warm you don’t even need a dressing – just mix all of the ingredients in and the feta will melt a little to create its own dressing—this way you can omit the salt too!
