Cucumber Chicken Salad Boats

What better way to enjoy the nice weather than with some light, low calorie, refreshing appetizers?  That’s why we made these veggie recipes last week– our Strawberry and Citrus Salad with Avocado  and our Baked Zucchini Boats and our Smoked Paprika Zucchini Chips.  Now We can’t wait for you to try these cucumber chicken salad boats! They are quick and easy to make, AND are only 10 calories per cucumber boat!!


(serves 18 cucumber boats)

Ingredients

  • 1 T. Chia seeds
  • 1-1.5 chicken breasts, cooked and chopped into small pieces
  • 20 Sprays of Wishbone Salad Italian Dressing spray
  • 1c. or 3 large celery stalks, finely chopped
  • ½ c. red grapes, cut in quarters
  • 2 large cucumbers
  • 3 T. parsley, finely chopped

 

Directions

  1. Slice each cucumber into 1 inch thick slices. Using a melon baller, scoop out the seeds of the cucumber (be sure not to scoop all the way through the cucumber shell, keep the bottom closed)
  2. Combine celery, grapes, chicken, chia seeds, and Italian dressing in a medium mixing bowl
  3. Fill each cucumber boat with 2 T. of chicken salad
  4. Top each cucumber boat with a pinch of parsley
  5. Dive in and enjoy!
