Faux Butter

We shared one of our favorite summer squash recipes with you yesterday, but realized we love it so much we can’t share just one!  Another way to enjoy summer squash is as a faux butter.  Although it doesn’t look like butter, it sure does taste like it (or maybe even better)!

Faux Butter

Serves 10

Ingredients

  • 3 medium summer squash, finely grated
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 tablespoon red onion, minced
  • Salt and pepper to taste

Directions

  • In a frying pan, saute the onions on high heat until translucent.  Add the garlic and continue cooking for about 1-2 minutes, or until the garlic is aromatic.
  • Reduce heat to medium or medium-high.  Add the zucchini.  Cook for about 15 minutes, or until a consistency you can spread.
  • Enjoy!

We love to eat this on toast instead of butter, as a spread on a sandwich, mixed in with scrambled eggs, over pasta, and so many other ways! Occasionally we’ll even use a fancy oil, such as macadamia nut oil, for a nuttier flavor.  Other modifications are to add a squirt of lemon juice or spices such as parsley and oregano.  There are endless variations on this great recipe!
