Comfort Food: Apple Pie

Craving apple pie?  Try this slimmed down version…

We’ve always been those girls who loved the inside of the pie, oreo, sandwich or whatever –more than the outside–and many times you can make the inside of comfort food a delicious (and healthy) weight loss recipe.  You know those people who go for, the icing, the filling–we’re those gals.  And as registered dietitians and personal trainers with a sweet tooth, you better believe we’ve found ways to get our fill 😉 but in ways our waistline appreciates!  This lil’ number you see below, is one that Lyssie now keeps 24/7 in her fridge to go for when she gets a sweet craving.  She doesn’t worry about the other “outside” offerings –she’s only interested in the “meat” of the deal. 😉  But some of our clients really love it with the “crust”–and if that’s for you too, read on for that direction.

You can read about the steps below, but here’s how they look as you do them. 🙂

Simply slice an apple into 1/4-1/2 inch-thick slice.

 

Sprinkle with cinnamon (approximately 1-1/2 teaspoons, although we tend to do much more than this and LOVE it), covering all sides of apple. Lay the apple pieces flat (not on top of each other) with apple pieces touching one another on microwave-safe plate. The apples below were a little bit too much on top of each other and it did take longer to cook. We needed a bigger plate. 🙂

 

Add a teaspoon or so of water and microwave on high for 5 minutes.  Remove from microwave.  This took a little bit of trial and error to get it perfect in our microwave, but now that we know how, we nail it every time! 🙂 So you may need to add more water depending on your microwave.  And you may need to place it back in the microwave in 30 second increments with more water, until it’s ooey, gooey, apple-y pie delicious! If it still looks hard you either need more water or to cook it for longer. Also, we recommend that when you place it in the microwave that with each apple piece touches another but not on top of each other, just touching so there is not space between them since when they cook they shrink down and this will keep them moist and juicy.  Check out below for more details…

Easy, Five-Minute Cinnamon Baked Apple Graham (or Ginger Snap)

Directions:

A sweet syrup from the apple and spice will be on the plate (don’t toss this appley spice goodness!), scoop it and the warm apple on a graham cracker (or put in Tupperware with apple, see below) with 1 tablespoon Fat Free Redi whip and enjoy!

This treat is 140 calories while a slice of apple pie will set you back about 450 calories.  Holy Apple!

Or for 80 calories: On a daily basis we actually keep this apple pie mixture in our fridge and eat it cold as is–no graham cracker or Redi Whip. (However, sometimes we add the Redi Whip immediately before eating). It’s so delish–and we like this whole “inside of the pie” better cold! YUM!

*NOTE: Microwave cooking times vary, so experiment to see what works best for you.  Start by putting the apple in the microwave for 3-1/2 minutes, and if it doesn’t look ready, simply add more time.
VARIATIONS:

  • Pumpkin pie spice can be used instead of cinnamon.

**You can make mini apple pie sandwiches by using ginger snaps as the sandwich bread and the apple filling in the middle.

BONUS: Apples are packed with soluble fiber which helps to lower cholesterol and stabilize blood sugar.  Cinnamon has blood-sugar stabilizing benefits too!
