Avocado Tuna Salad with Kale
¼ of an avocado
¼ cup Greek yogurt
Juice of ½ lemon
1 5-oz can tuna in water, drained
¼ cup chopped red onion
½ cup chopped tomatoes
Pinch of ground black pepper
1.5 cups shredded kale
Juice of ½ lemon
1 tsp olive oil
Directions:
1.Mash together the avocado and yogurt with the juice of ½ a lemon.
2.Add the tuna, chopped red onion, and tomatoes.
3.Season with ground black pepper.
4.Massage the lemon juice and olive oil into the shredded kale, then top with the tuna salad.
