Easy Strawberry Banana Peanut Butter and Jelly

As much as we love food it’s hard to imagine that we were once super-picky kids who didn’t ever want to stop playing to come in and eat!  In fact there was only one thing our mom could be guaranteed we’d eat without a complaint…Peanut butter and Jelly.  Yup, that’s what we “liked in our belly”.  We even sang that silly song all of the time—our poor mom…She’s a saint! 🙂  In honor of the only food that helped to make our mom’s life a bit easier (and in honor of the food so many people love), we want to celebrate National Peanut Butter & Jelly Day which was this past week.  Here, we have a slightly different and healthy PB & J twist!  Enjoy!

Easy Strawberry Banana Peanut Butter and Jelly

Serves: 1

Ingredients

1 slice 100% whole grain, fiber-packed bread

1 tbsp. peanut butter

1/3 banana, cut into coins

2 large strawberries, cut in slices

 

Directions

  1.  Spread peanut butter onto one side of a slice of bread and toast lightly until peanut butter it gooey.
  2. Place banana coins and strawberries on bread. Enjoy!!
