Easy Turmeric Avocado Egg Salad
Serves: 3
  • 8 hardboiled eggs, 4 with the yolks removed
  • 1 medium avocado
  • 5 tablespoons Greek low-fat yogurt
  • 2 teaspoons lemon juice
  • 2 tablespoons cilantro, chopped
  • 3 (85g) radishes, chopped
  • ½ teaspoon turmeric
  1. Chop up the egg whites and yolk for salad.
  2. Mash avocado in a bowl. Add cilantro, turmeric, radishes, lemon juice, and egg whites. Thoroughly mix and serve on whole grain bread or a bed of lettuce.
