Sparkling Cranberry Mimosa

  • ⅓ c. pure orange juice (3/4 medium orange juiced)
  • ⅛ c. dried cranberries
  • 4 oz. champagne (chilled)
  • 2 ounces seltzer
  1. In a blender, mix orange juice and cranberries on high until cranberries are completely pureed into the orange juice. The mixture should be a pink-orange color. Pour in the seltzer and stir with a spoon. Then pour juice mixture into a champagne glass and top with champagne and seltzer. Enjoy!
*Variation: We also often make this with 3 ounces champagne and 3 ounces seltzer or with even more seltzer--you get a larger drink and about 85 calories! Woot! Woot!
