Comfort Food Reinvented - Apple Pie

Ingredients
  • 1 apple
  • 1-1/2 teaspoons cinnamon
  • Ginger snaps or graham cracker
  • 1 tablespoon fat free whipped cream (optional)
Instructions
  1. Simply slice an apple into ¼-1/2 inch-thick slices and sprinkle with cinnamon (approximately 1-1/2 teaspoons-although we do much more than this and LOVE it), covering all sides of apple. Lay the apple pieces flat (not on top of each other) with apple pieces touching one another on microwave-safe plate. Sprinkle with a teaspoon or so of water and microwave on high for 5 minutes. Remove from microwave. This took a little bit of trial and error to get it perfect in our microwave, but now that we know how, we nail it every time! :) So you may need to add more water depending on your microwave. And you may need to place it back in the microwave in 30 second increments with more water, until it's ooey, gooey, apple-y pie delicious! If it still looks hard you either need more water or to cook it for longer. Also, we recommend that when you place it in the microwave that with each apple piece touches another but not on top of each other, just touching so there is not space between them since when they cook they shrink down and this will keep them moist and juicy.   2. A sweet syrup from the apple and spice will be on the plate (don't toss this appley spice goodness!), scoop it and the warm apple on a graham cracker (or put in Tupperware with apple, see below) with 1 tablespoon Fat Free Redi whip and enjoy!
