Winter Comfort Food Made Healthy! Turkey Pot Pie

Ingredients
  • ¾ cup skim milk
  • 1 cup low sodium chicken broth
  • 3 Tbsp. whole wheat flour
  • 1 tsp. poultry seasoning
  • 1 tsp. thyme
  • 1 cup turkey breast, cubed
  • 1 (10 oz) package frozen mixed veggies, thawed
  • 3 green onions, chopped
  • ⅓ tsp. salt
  • ¼ tsp. pepper
  • 1 can (7.5 oz) refrigerated reduced-fat biscuits
Instructions
  1. Preheat oven to 425 degrees F.
  2. Set out 5 ramekins and lightly spray each with oil in a spray canister to grease them.
  3. In a medium saucepan, whisk together milk, chicken broth, flour, poultry seasoning and thyme. Once mixture begins to boil reduce heat to a simmer, while continuing to whisk. Once mixture has thickened, roughly 4 minutes, remove from heat and stir in turkey, mixed veggies, green onions, salt and pepper. Cover to keep warm. Set aside..
  4. Lightly coat a flat surface with flour. Place 5 biscuits on the surface and roll into 4-inch rounds. Fill each ramekin with the turkey mixture and then place the rolled out biscuits on top of each. Pierce several holes in the top of each of the biscuits to allow them to vent and place in oven.
  5. Bake until the biscuits are golden. When it is ready the filling should be bubbly, approximately 12 minutes.
