Mash & Mix Microwave Cookie--Pumpkin Spiced Apple Oatmeal Cookie

There’s nothing better than having a craving and being able to satisfy it –and guilt-free—by simply whipping up a waistline-friendly, satisfying treat in moments, with a few simple ingredients you already have in your house! That’s why we’re here to bring you one more—just in time for Fall! In the spirit of Halloween and Thanksgiving, it includes the mighty ‘ole pumpkin! But don’t worry—canned pumpkin works just fine and we think it’s absolutely scrumptious! And although we’ve been waiting to bring you pumpkin until October, we happen to love pumpkin (for its’ creaminess, it’s versatility, it’s fiber—and oh so much more!) and use it all year round. We certainly don’t discriminate based on the seasons when it comes to pumpkin!
Ingredients
  • ½ small apple, finely diced, ⅓ cup
  • 1 teaspoon cinnamon
  • 1 very ripe banana, mashed
  • 2-1/2 Tbsp. vanilla almond milk
  • 3 Tbsp. rolled oats
  • 2 Tbsp. pumpkin (we used canned)
  • 1 Tbsp. peanut butter

  2. If using oven, rather than microwave, preheat oven to 375°.
  3. In a medium sized bowl, “mash and mix” everything together.
  4. If using microwave: Spritz a nonstick microwave safe bowl or plate lightly with oil.
  5. For one large cookie: Add mixture flat across the bottom
  6. If making two cookies: Divide mixture in half and place each half, flattened on plate. If making eight cookies: Place 1 Tbsp of mixture on the plate next to each other.
  7. Microwave one large cookie on high 5 to 6 minutes, depending on the strength of your microwave cooking time may vary. For two cookies or 8 cookies, microwave for 4 minutes and then check. Simply use a tooth pick or a fork and poke cookie the whole way through. If wetness comes off on fork or toothpick, continue to put back in microwave in 30 second increments until cooked.
  8. If using oven: Place 1 Tbsp of mixture on a greased baking sheet and bake for 10 minutes. Remove from oven when cooked completely through.
  9. Allow to cool and eat as is, or refrigerate for a bit before serving. We often did this to let is solidify a bit more and serve cold—so delish! Add a dollop of yogurt and enjoy!
