Healthy Guacamole
Serves: 12
  • 2 avocados
  • 1 small red bell pepper, finely chopped
  • 1 small tomato, diced
  • ½ teaspoon cayenne
  • ¼ cup Onion, minced
  • 1 Clove garlic
  • 1 Tbsp. lemon or Lime Juice (optional)
  1. Cut open avocados and scoop the insides out discarding the Discard skin and pits. Use a fork or mixer to blend the avocados until smooth and there is no longer a lot of lumps..
  2. Add the red pepper, tomato, cayenne, onion and garlic and mix well until all ingredients are combined evenly. Add the lemon juice and mix again.
  3. Spread this on your sandwiches as a condiments, top your salads, or treat yourself with a scoop—right with spoon ;)!
