Creamy Ginger Carrot Mash

Serves: 6
- 6 carrots, peeled and sliced
- 2 Tbsp. plant-based organic natural butter spread
- 1 clove garlic, chopped
- ¼ tsp. ground ginger or 2 Tbsp. grated fresh ginger
- 1 Tbsp. firmly packed light brown sugar
- Boil carrots in hot water until firmly cooked. Add the brown sugar and mash until all the lumps are gone.
- Melt butter in a saucepan and stir in garlic and ginger and cook, stirring frequently for about1 minute.
- Stir the carrots into the mixture, mixing well until thoroughly combined.
- Heat through on low heat for about 2 minutes to keep warm.
