Stuffed Jalapeno Poppers

Ingredients
  • 1 can of garbanzo beans (chickpeas), drained (19 0z)
  • 3 garlic cloves, crushed
  • 1 tsp cayenne pepper
  • ½ tsp black pepper
  • ½ tsp red pepper
  • ¼ cup water
  • 1 lemon
  • 8 Jalapenos, sliced in half, seeds removed
  • ½ small tomato, diced
  • ⅛ cup Feta cheese
Instructions
  1. In a food processor, add the beans, garlic, cayenne pepper, red pepper, and water.
  2. Cut the lemon in half, and squeeze the juice of each half into the food processor.
  3. Mix the ingredients together until smooth.
  4. For each jalapeno half, dig out the center.
  5. Fill each jalapeno shell with the hummus, and top with the cheese and tomato. Enjoy!
