- 2 tablespoon nonfat plain Greek yogurt
- ¼ tablespoon curry powder (ideally organic)
- 4 ounce cooked chicken breast, diced
- ⅛ cup red onion, diced (optional)
- 1 tablespoon slivered almonds
- 1 tablespoon cilantro, chopped
- ⅛ cup red grapes, sliced in half
- ⅛ cup green apple diced (about ΒΌ small apple),
- 2 cups organic mixed greens
- Combine the yogurt and curry.
- Combine chicken, red onion, cilantro, almonds, cilantro, grapes, and apple with the curry-yogurt mix.
- Serve on top of the mixed greens
- Enjoy!
