Citrusy Asparagus

Ingredients
  • 1 pound asparagus spears
  • 1.25 tablespoons olive oil
  • 1 lemon
  • 1 orange
  • 1 clove garlic, minced
  • 5 teaspoons toasted pine nuts
  • Salt
  • Pepper
Instructions
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Cut lemon and orange in half. With one half, cut thin rounds. Zest and juice the other half.
  3. Place asparagus on a baking sheet lined with parchment paper. Sprinkle garlic. Drizzle with 1½ tablespoons olive oil. Add salt and pepper.
  4. On a second baking sheet lined with parchment paper, spread out the citrus slices. Drizzle with the remaining olive oil.
  5. Place both baking sheets into the oven. Cook for about 12-15 minutes, or until the asparagus is tender and the citrus slices are slightly browned, flipping both the citrus slices and the asparagus about halfway through.
  6. Transfer to a serving platter, top with pine nuts, and enjoy!
