Egg, Apple and Sunflower Salad

This salad had us at creamy, crunchy and delicious…

That’s right, when we create a recipe with ingredients that we love and that’s also got creamy and crunchy in it, then we’re all over it.  And as we’ve been whipping up a lot of recipes with eggs, (have you tried our Bell Pepper and Egg Salad Stuffed Celery or our Egg Salad Tomato Poppers), we couldn’t wait to make this hot number!

So when we saw a study out of Purdue University that showed that when you include eggs in a salad with raw vegetables the eggs help to boost the absorption of carotenoids, the fat-soluble vitamins that help reduce inflammation and oxidative stress, we immediately were inspired to create a salad with eggs!

Egg, Apple and Sunflower Salad

Ingredients

2 cups mixed greens (any of your choice)
2 hard-boiled egg chopped (We use Eggland’s Best eggs because they have 25% less saturated fat than other eggs.)
1/4 cup chopped artichoke
2 tbsp sunflower seeds
1 chopped small green apple
1/2 cup sliced cucumber
1/2 cup celery
1/2 cup jicama
1/2 cup carrots
1/4 cup grape or cherry tomatoes
1 tsp olive oil
Flavored vinegar to taste (optional)
Fresh squeeze lemon juice to taste (optional)

Directions

Add mixed greens to a bowl. Top with egg, artichoke, sunflower seeds, apple, cucumber, celery, jicama, carrots and tomatoes. Mix ingredients together. Drizzle with olive oil and flavored vinegar of choice or lemon if desired. The apple, sunflower seeds, and jicama add a delicious crunch and sweetness that complement the flavor of the tuna.
