Balsamic Grilled Eggplant
Makes 4 Servings
Ingredients
1 large eggplant, washed and sliced ½ inch thick, about 3-4” in diameter
1 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1 tbsp Italian seasoning
Directions
Simply whisk together the oil, balsamic vinegar and Italian seasoning. Quickly marinate the eggplant slices in the mixture. Using a simple Panini grill*, place the marinated eggplant on the warm grill then put the top down. Let them grill for 3-4 minutes, or until browned with the grill lines. Enjoy!
*If you don’t have a Panini grill, no worries! A simple nonstick skillet will do the trick just as well!!
