Cauliflower Rice Stuffed Avocado Boats

This recipe is filled with unique flavors, packed with fiber (9 grams, woot, woot!) and phytonutrients. Each boat has only 140 calories.

 

Want to know a really cool “fun fact” about avocados? They’re nutrient boosters! Since veggies have fat-soluble nutrients like beta carotene, vitamin D and E that need to be eaten with some fat in the meal in order to be absorbed, avocados serve as this healthy fat. The avocados enhance the absorption of fat-soluble vitamins. So for example, this recipe also contains tomatoes which contain the fat soluble vitamin, beta carotene. The fat in the avocados helps your body to absorb beta carotene. So tomatoes and avocadoes make quite the nutrient powerhouse duo in this recipe! Beta carotene acts as a natural sunblock, so if you’re heading outside, this is the perfect recipe for you!

NOTE: It doesn’t take much fat to absorb the fat-soluble vitamins—just 5-10 nuts or ¼ of avocado should do the trick!

 

Cauliflower Rice Stuffed Avocado Boats

(Yields 4 boats)

Ingredients:

  • 2 cups frozen cauliflower rice
  • 2 tablespoons whole flax seeds
  • 1 bunch of cilantro, chopped
  • 1 lime
  • 2 avocados
  • 1 cup diced tomato
  • ¼ cup bread crumbs
  • 1 tablespoon olive oil

 

Directions:

  • Add oil to frying pan on medium heat and add frozen cauliflower rice.  Heat, while stirring occasionally, for about 5-8 minutes. After warmed throughout, add flaxseeds, cilantro, and juice from the lime to the cauliflower.
  • Mix well.
  • Half the two avocados, scoop out a spoonful of the inside to allow for more stuffing. Stuff the avocados with blended mixture.
  • Top with ¼ cup tomato on each boat.
  • Sprinkle breadcrumbs on top of the tomato and voila! A simple, beautiful side dish, appetizer, or anytime fun food!
