Chilled Watermelon Soup

It’s finally officially SUMMER!! We are so excited for warm weather, delicious food, and being able to relax; and we know you are too!

As you probably know, we frequently talk about eating “in season” produce and how important it is for our environment (and our health!). Now’s the time to go for cherries, berries, peppers (both bell and sweet), blueberries, peaches, and melon, including watermelon!

We love this Chilled Watermelon Soup Recipe. Have you ever had watermelon soup? A friend of ours said that surprisingly, adding a little jalapeno pepper to their watermelon soup recipe adds a delicious kick. We’ll try that soon and keep you posted!

Watermelon Soup

Makes 4 cups

Ingredients:

  • 4 cups seeded watermelon cubes
  • 1/3 cup apple juice
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chopped fresh mint
  • 1/4 to 1/2 teaspoon ground ginger
  • 1 tablespoon honey (optional)
  • 1/3 cup plain nonfat yogurt

Preparation:
Process first 5 ingredients and honey, if desired, in a blender or food processor until smooth, stopping to scrape down sides. Cover and chill 1 hour. Serve in individual bowls with a dollop of yogurt.
