Green Goddess Edamame Salad and Dressing

If you love edamame beans as much as we do but find yourself only enjoying them as an appetizer at an Asian restaurant steamed in their pods, then you’ve gotta give this delicious salad a whirl! It makes a fabulous meal for Meatless Monday—it’s packed with 19 grams of protein and 14 grams of fiber—and it’s got 268 calories—woot, woot!

Green Goddess Edamame Salad and Dressing

Prep time: 15 minutes
Yields: 1 serving

Ingredients

Dressing
• 2 Tbsp plain Dannon Oikos Greek nonfat yogurt
• 1 Tbsp finely chopped, shelled, raw pistachios
• 1 Tbsp steeped green tea, cooled to room temperature
• 1 Tbsp thinly sliced green onion
• 1 Tsp finely chopped parsley
• 1 Tsp red wine vinegar
• 1/2 Tsp minced garlic
• Salt and freshly ground black pepper

Salad
• 3/4 cups frozen, shelled edamame
• 1/2 cup celery, thinly sliced
• 1/3 cups chopped marinated artichoke hearts
• 1/4 cups thinly sliced radishes

 

Directions
Dressing
1. Place the plain Dannon Oikos Greek nonfat yogurt, pistachios, tea, onion, parsley, vinegar, and garlic in a small bowl. Season to taste with salt and pepper. Set aside.

Salad
1. Defrost the edamame in the microwave according to the package directions. Let it cool to room temperature.
2. Toss the edamame, celery, artichoke hearts, and radishes with the dressing and serve.
