And as an added nutritional bonus, there are fresh, nutrient-packed raspberries in this dressing. Not only are raspberries beautifully red/pink in color, but they also are rich in fiber and antioxidants. They’re perfect to keep your intestinal tract healthy and help to repair some of the damage done to your cells after a long day (their antioxidants will help mop up the damaging free radicals)! Try this homemade raspberry vinaigrette to add a little extra raspberry into your day, and your salad!
Raspberry Vinaigrette
Makes 12 servings
Ingredients
- ¼ cup extra virgin olive oil
- 4 ounces of raspberry jam
- ½ cup of red-wine vinegar
- 4 tablespoons orange juice
- 1 tablespoon Dijon mustard
- ¼ cup raspberries (fresh)
- Pepper to taste
Directions
Puree all ingredients, except olive oil, in a food processor and blend until smooth. Slowly add in oil until fully combined and ENJOY!
