Berry Burst Breakfast Bars

Did you know that this week is National Vegetarian Week? Eating vegetarian, even if it’s just one or two days a week, can lighten up your meals and make you feel more energetic.

Start your day off on the right foot with these easy and delicious Berry Burst Breakfast Bars. These bars are filled with healthy fats, protein, and fiber to keep your energy levels up for hours! We found this recipe on the National Vegetarian Week website. If you’re like us and need a little more protein in your breakfast to prevent feeling hungry too soon, we suggest enjoying half a bar and having a 4-ounce soy yogurt.

Ingredients:

  • 50g unsalted butter
  • 3 tbsp sunflower seeds, roughly chopped
  • 3 tbsp pumpkin seeds, roughly chopped
  • 3 tbsp pumpkin seeds, roughly chopped
  • 1 ripe banana, mashed
  • 100g rolled or jumbo oats
  • 50g ground flaxseed
  • 50g dried goji berries or cranberries
  • 3 tbsp maple syrup

Directions:

  • Preheat the oven to 400°F
  • Melt the butter in a small pan. Once melted, add all remaining ingredients.
  • Pack into a small, foil-lined loaf pan. Bake for 25-30 minutes, or until crispy on top. Cool before cutting.

*You can make this recipe vegan by substituting vegan margarine for the butter
